Øland is a rare historic soft red Nordic wheat, made famous by Claus Meyer of noma restaurant in Copenhagen. With distinct flavor and baking qualities, Øland has been compared to Einkorn ‘ancient grain’. With it’s rich flavor and low protein, this 2024-harvest Øland produces richly-flavored but delicate cookies and shortbreads, as well as quickbreads
