From our friends at Admiral Maltings comes this amazing diastatic malted wheat flour made using the same organic Patwin white wheat we mill as a regular, un-malted flour.

Incredible depth of flavor, with notes of hay, mineral and fresh dough (!) along with malt’s characteristic sweetness and aroma. Use as an add-in for pastries, cakes and cookies. Use a light hand as a dough conditioner in breads, since this malt has moderate diastatic (enzymatic) power and will break down your gluten if you add more than 2-3% by weight. You can be more generous adding Yolo Gold to batters and pastries that require less gluten development.

Our flour is milled to order. Order by 5 pm Sunday for milling the following week.
