An exceptional diastatic malt flour milled to order from Admiral Maltings floor malted, California-grown rye. Adds cinnamon and spicy pepper undertones to the malt’s rich caramel flavor. Not only does it bring sweetness and aroma as an add-in for pastries, cakes and cookies, but it will kick your sourdough starter into overdrive when added in small amounts (< 5%) when feeding. Use up to 5% as a dough conditioner in breads.
