Wholegrain blend of 60% Yecora Rojo hard red wheat, and 38% Patwin hard white wheat, with a touch of malted rye to promote fermentation and dark crusts, Max’s is our red-wheat-forward baking blend.

Max’s blend is a workable, flavorful all-purpose wholegrain flour with plenty of strength for breads, without being heavy or bitter. Yecora Rojo and Patwin are both high-scorers in California Wheat Commission annual Quality Reports, especially as whole-grain flours . Available in 1kg. and 2kg retail packaging.
