Our Hard Red wheat flour is milled from 100% California grown varietal red wheats. The specific varieties we’re milling will vary seasonally according to grain quality, availability, and baking performance. Whenever possible, we prefer to mill non-PVP (aka: non-patented and heirloom varieties.
Hard Red wholegrain wheat flour is typically our strongest non-blended wheat, used for bread doughs and other baked goods that put a premium on gluten strength and elasticity.
