Chiddam Blanc de Mars Chocolate Chunk Cookies

Organic butter, 2 sticks
Organic coconut sugar, 1 cup
Organic cane sugar, 1 cup
Organic eggs, 2
Organic vanilla extract, 2 tsp
Chiddam Blanc de Mars flour, 3 cups
Baking powder, 1 1/2 tsp
Baking soda, 1 tsp
Sea salt, 1 1/2 tsp
PipeVine Chocolate, chopped, 8 ounces
Preheat the oven to 350°F and prepare a sheet pan with parchment paper. Beat butter and sugar in the bowl of a stand mixer until light and fluffy. Add eggs one at a time, scraping the bowl after each addition.
In a separate bowl, whisk together the flour, baking powder, baking soda, and sea salt. Add this to the creamed butter mixture and mix until just combined. Fold in the chocolate with a silicone spatula.
Use a 2 tbsp scoop to mound balls of dough onto the prepared pan. Leave 2-3 inches between them. Sprinkle the tops with Maldon and pop into the oven. Bake for 12-18 minutes, depending on how you like them.
